Pinterest Series- Paleo Pancake Heaven!

You may be asking yourself how is this possible. If you have followed the diet format of the infamous Paleo Diet you will know that there is NO WHEAT!! There is no sugar, no simple carbs to this and you are limited by your sweet fruits as well. (My best friend revealed to me as she spent nine months within this diet. I need to create her a medal!) I found this on Pinterest and I never stated this on this blog but I am in an attempt to try and make some of the recipes that I find on Pinterest so that you know it is not just for pinning and forgetting- you can actually score with the meals in there. Cinnamon and Sugar Goodness

In our home there are two things that are being eaten- conchas  (Mexican Sweet Bread) or Croissants. There is also cake and cookies so this is TERRIBLE if you are trying to diet and loose pounds from reduction in simple carbs. (please note, if you are diabetic and you come to visit us I will certainly make something else that we all can eat. No sweet bread for you!) I have gotten a little fed up with the routine and decided to make something that I can gather I would enjoy along with others that come over. I am very big on trying to make something a little better and those croissants were annoying me a little with their bland taste. I have been doing creative things for about a month now- sprinkling cinnamon on them being one. This time, I think I got it right! Frame the Pride!

Although I have been MIA for a while I have not been inactive at all. I have been working on fitness and creating healthy little weekly goals. Two weeks ago, my goal was to eat a salad for lunch everyday. Those greens really removed my bloated belly and I even dropped a few pounds. (totally an understatement- I dropped eight pounds in a week! Yikes!) If you have also been following my running and fitness blog you would also know I did an amazing feat- I ran and completed nine races. I knew after the first one I wanted to do something creative with this accomplishment so I kept bibs, bags that the bibs and shirts came in, the flyers to promote races I signed up for later, etc. Many of this paperwork was thrown away by hubby since I started the roots for a hoarder. Reflections of 2012

My life in 2012 was let's put it like this. . .unique. I began this year remembering the loss of my father while freshly mourning the loss of my best friend, my mother. . . To cherish her memory: from r-l: eldest brother, sister-in-law, middle brother, me and hubby Cousin, mother and daughter- at least she was there when I became a doctor.    When I got back to Chicago from Phoenix I tried to get my life together. Hubby and I spent a lot mainly for travel during the holidays and I was without school and without a job. I began to sink pretty low and stay off facebook and social media if I could. I will admit there were days where I stayed in bed all day. Hubby didn't mind which I love him to death for that. He was seriously my rock. I began to be myself a little more once I began training for the Shamrock Shuffle. The winter was quite forgiving and I also began the yoga and yoga sculpt journey. Working out led me back to my faith as well. February came and I began ...

Happy Holidays!

Happy Holidays from the Fregoso's!  This year, we are opting to stay in Chicago just because the thought of snow elsewhere may shock us. (Then again, I could go sledding.) So we are hibernating until possibly New Years. We are not upset about it at all. We have a cool new toy that keeps us dancing throughout the home as well as all the stuff we bought each other for Christmas. "Piney" (our Northern Island Pine- living Christmas tree) is doing well! He is growing and getting all wild on us. Hubby can't even sit without running into his branches. Merry Christmas, Happy Hanukkah, Happy Kwanzaa, Happy Holidays!

Goals, lists and the like

With the holidays comes resolutions. I think one will be to add more so to this blog fun and inventive things such as my ability to crochet. . . But, I have been lacking in this dept since I started working. So, this next year- GRANNY SQUARES!! Also, Quinoa is becoming widely popular so I want to finally make some quinoa loaf. I have been researching ideas and some recipes here and there. Coming soon. . . 

Christmas Pics and Memories

As I am getting ready to get my cooking on for next week for Thanksgiving I can not help but think about Christmas cards seeing as it is everywhere! Our first Christmas card as a married couple was this. . . Christmas 2009 Not bad for a Holiday card. I am thin, we look happy and we are on an ATV- How fun is that? The photo was taken when we were on our Honeymoon in Mexico. The years following there were either no cards or generic cards. This year I want to actually do something fun and sweet this Holiday season. I am also reflecting on the three years of our marriage and all that has happened. I want to actually go ahead and make some photo books of each year. It might be a little expensive this year since I have three I need to do but I would gradually do it throughout the next year and so when 2013 is almost complete I will have all four years to show off in case anyone stops by. *gears are turning* Check your mailbox. . .next month!
