Another Mexican Dish Conversion

I am always a work in progress. I love to learn and create when I have all the skills I need. So, I have spent 3 years getting my husband's favorite dishes correct. I was taught by his mother and my sister-in-law. I had to listen to the sister-in-law because my Spanish is not as good in translation as I thought. Well, I should correct myself and say that it is only one favorite dish that I know of. . . RICE AND MEAT! (as he puts it) (Spanish Rice and Skirt Steak or Arranchera ) So, I make this for him and hopefully I have something that I made the day before that I can eat because I have tried the whole making two dinners at once and that is a lot of dishes to clean. So, this was hubby's dinner the night before last. Last night, I was hungry and did not want to spend money going out to a vegetarian restaurant and there was "nothing" in the house to eat. . . or so I thought. Chorizo con Huevos

Once a month, I make my dear sweet husband Chorizo con huevos or chorizo and eggs in English. When we were dating, he knew he wanted to marry me so he took me to his house and showed me how to make chorizo and eggs. I thought it was disgusting because it was made in pork and I never got with eating pork and other red meat (yes, pork is included in that too.) so I never had a chance to try it. Since November will be two lovely years of vegetarianism I thought it would be nice to see if there is a veggie style chorizo out there that I could try. Here are our recipes: Traditional Chorizo con huevos recipe Ingredients: - El Popular Autentico Chorizo (he prefers this particular brand) - 5 large eggs - 1 Tbsp of corn oil Instructions: - Grab a large skillet and add a very small amount of corn oil to the skillet. - When skillet is warmed (should take 1 minute) grab one sausage - Remove casing. Where do I begin?

I have been tinkering with this for a while so if this looks a little sketchy it is just me playing around with things. Well, I will introduce myself and my life. My name is D and I am 32 years old. I live in the three flat surrounded by my in-laws. It is pretty interesting and quite funny how it all happened! I moved to Chicago from Milwaukee in 2005 with dreams to become a great writer and find my creative and inspirations ju-ju after my dad passed away. I was encouraged to move here from a teacher I was dating in Chicago. Since being married things have been up and down but our marriage stays consistent- full of laughter and love. I have learned how to cook more authentic Mexican dishes (he is 1/4 Italian and 3/4 Mexican) more American dishes and Vegetarian dishes. I will try to display some recipes that I stole from pinterest, Native Foods cafe, magazines and other sources of my culinary madness.
